The garden is growing at superman speed, meaning I have more cukes than I know what to do with! Since I don’t have a canning kit, I made quick pickles in the fridge.
1 large cucumber, 1 small cucumber
2 cups white vinegar (or enough to fill the jar and cover all cucumber slices)
1 tbsp coarse salt
2 tbsp dried dillSlice cucumbers (I used a mandolin on medium thickness) and toss with all ingredients until fully coated. Place in covered container (or zip loc bag) in the fridge. Rotate every couple hours to evenly distribute the spices.
Pickles should keep for about a week. Delicious! You can add garlic, onions, and different varieties of vinegar to change up the flavor.
